The Wild Rocket Ham Sandwich Strikes Back

After doing a somewhat lower budget version of my Wild Rocket Ham Sandwich a few weeks ago. I decided it is just not right to leave it at there. That is why two weeks ago when my salary is out, I went to shop for the essentials for my true version of the Wild Rocket Ham Sandwich.

Sandwich Ham, yes this time the square shape sandwich ham is available. Nicely fitting on a piece of wholemeal bread.




As for bread, I go healthier a bit by going for Anzen 18 Organic Grains bread. It's high in fiber and cost only RM 1.50 more than a loaf of Gardenia or High 5 wholemeal bread. I like the texture of the grains on the soft bread.




Of course, our main attraction, Wild Rocket. This time I didn't put in the freezer, so it's still dry and crunchy.




As for dressing, I use Coleman's English Mustard. A tad bit more expensive than other brand but I will say that this is what English Mustard is really suppose to be like. A tinge of spiciness like Wasabi but not spicy until you till breath fire through your nose.



Some of you might have noticed that I didn't spread butter on the bread. Yes, with this combination, butter will only weaken the chemistry between the ham, wild rocket and English mustard.





Not really too hungry at that time, so I just made a double decker. This is one of my favourite combination for sandwich. What's your favourite when you make your own sandwich at home?

Lazy Meal: Wild Rocket and Ham Sandwich

I am kind of lazy when it comes to preparing my own meal, that's why most of the time I will eat outside if no one cooks at home. Sometime I do prepare my own meal at home but it will be mostly food that is easy to prepare like Korean instant noodle and sandwich.

Sandwich is one of my favourite because I can play mixed and match with the fillings and dressing in between the bread. One of the favourite herb that I like to use when making a sandwich is wild rocket. It has a distinct aroma and taste. Yes, it's a bit bitter yet there's this taste that I found very captivating that I can't describe. Please note that Wild Rocket and Rocket are very different in terms of the taste and aroma. I prefer Wild Rocket, once I tried using Rocket because I can't find Wild Rocket, it just can't give me the same taste.

So, what I usually do is buy sandwich ham as one of the filling for my sandwich. Sandwich ham has a thicker cut than the normal ham, some cut is in square, which is a nice fit for the normal bread size. The one I bought that day is cut in rectangular, so I have to trim the extra a bit.

As for the bread, I like wholemeal bread because of the texture and the wheat taste that is very nice when used in a sandwich. I chose High5 instead of Gardenia because it can last longer in term of expiration date but I think Gardenia tasted slightly better.

Pure salted butter is used as the spreading. No margarine or any hydrogenated vegetable oil for me please.



One or two pinch of freshly grounded pepper to give the Wild Rocket a bit of spice. Usually I use yellow mustard for dressing but I remembered after I checkout from the cashier. So, I'll have to do without dressing. Of course, you can always use your favourite dressing here like honey mustard, mayonnaise, thousand island, french dressing and etc.

I made a mistake of putting the wild rocket in the freezer which made it very wet and turned soggy. I put it in the freezer because my cooler is not working.




Nice, simple and tasty sandwich. Wild Rocket and Ham Sandwich. I made this for breakfast but it can be eaten during anytime of the day.

Ingredients:

Butter for the spread
4 to 6 slices of wholemeal bread (depending of how many you wanted to make)
2 to 3 slices of sandwich ham
Wild Rocket a pack which is enough to make 8 to 10 sandwiches
Grounded white pepper.
Dressing (any salad dressing that you like, for me I prefer yellow mustard)

Instruction:

1. Spread the wholemeal bread with butter.
2. Put a slice of sandwich ham on a slice of wholemeal bread.
3. Put some wild rocket on top of the ham, ground a bit of white pepper on it.
4. Put your dressing on the ham and wild rocket. Cover it with another slice of wholemeal bread.
5. Repeat steps on the same bread with another slice of bread as top if you want to make a Double Decker.

The Chefs Show Off in Kin Shui Tei

As I've promised, the videos of the sushi chef of Kin Shui Tei demonstrating how to cut a tai (snapper) and make it into sushi and the teppanyaki chef doing his stuff. Last but not least, Chef Simon Seow's very own fried rice on the teppanyaki (铁板烧).

But alas, Youtube is giving me some problem uploading the videos. I was only able to upload one video out of so many T_T. So, I'll be updating this page once the other videos are up, stay tuned.

The chef then turn the tai slices into sushi:



We then moved to the teppanyaki kitchen. The chef here, cook up some delicious beef teppanyaki. Look at the fire goes!!



Master Chef Tanabe then asked the teppanyaki chef to make wasabi shoyu sauce for the beef teppanyaki:



He then fried some rice on the teppanyaki. Watch how he did some stunt with the bowl of fried rice.



It's time for the fresh prawn teppanyaki with the special house made mayonnaise sauce.



Last but not least, it's time for Chef Simon Seow to show you how to fried rice on the teppan and do the bowl flipping trick.

Simon Cooks: Half-boiled Egg On Cheese Toast

It's time again for a lesson in lazy cooking. This time I'll be making something that you will find in Oldtown Kopitiam with a little twist. I added cheese on top of the bread.

Ingredients:

1 slice of whole meal bread
1 slice of cheddar cheese
1 Omega 3 egg

Steps:

Put the cheddar cheese on top of the whole meal bread slice. Toast it in the oven or microwave oven. As for me, I used microwave oven and from my trial and error, toast it at high for 2 minutes give the best result.

You'll be able to get something like this:




While, the cheese and bread is being toast, prepare about 1 liter of boiling water. Put the Omega 3 egg in a container, I used a saucepan for this. Pour the boiling water into the container with the egg inside. Be sure that the water covers the egg. Put on the lid and leave it for about 5 to 6 minutes.

After 5 to 6 minutes, prepare a bowl of room temperature water, take out the egg from the container with a spoon. Put it into the bowl of water to let it cool down for about 10 seconds, then break the egg and open it on top of the cheese toast. Put a drop or two of soya sauce and a pinch of pepper to taste on the half-boiled egg.

There, the half-boiled egg on cheese toast is ready. The half-boiled egg slides off the toast so I accidentally break it hence the picture. Nevertheless, it still tasted good. Until next time then for lazy cooking. For simple and healthy meals, you might want to learn from the Fucking Cook.

Simon Cooks: Jumbo Sausage with Wild Rockets

Well, not exactly cook because there's no cooking involved, unless heating up the jumbo sausages in the microwave oven, cleaning the wild rockets and squeezing the American Mustard on the jumbo sausages is consider cooking lol.

I really like the aroma of the wild rockets and the wild rocket has this kind of special taste that goes so well with sausage or ham. Real pork sausages used here. I don't really fancy sausage made with chicken meat, it just doesn't taste right and texture is all wrong.

A meal that is easily prepared, don't even have to heat up the oil on the pan. Yes, this is how a lazy person like me eat when I eat at home alone.

Simon Cook: Korean Instant Noodle

Even though I like to eat but I'm not very good in cooking. One of my specialty is cooking instant noodle, Simon style. LOL. Here, I'll show you step by step on how I normally dish out a bowl of yummy instant noodle.

Step 1: Preparation of Ingredients

There is no right or wrong in choosing ingredients, just open your fridge and cabinet and see what can be use. These are what I got at the time. Sorry for blur pictures, that time still new in shooting macro shot.



Korean Kimchi instant noodle, egg, frankfurter, Korean roasted seaweed, and enoki mushroom.




Drop the egg into a microwavable bowl.




Cook the egg in the microwave for 30 seconds using rapid reheat. While it is cooking. Boil about 600 ml of water using an electrical boiler/kettle. Then prepare the other ingredients.



Put frankfurter on a microwavable plate and cook in the microwave.



Clean and cut of the root of the enoki mushroom.


Leave the enoki in a bowl of clean water to rinse off any dirt.



My microwaved sunny side up egg. No oil needed.

After cooking ingredients that needed to be cook, we move on to Step 2.

Step 2: Cooking the instant noodle



Open the packet, duh.



Heat up the water boiled using the electrical boiler/kettle in a pot. It's faster to reach boiling temperature using pre-cooked water.



Put in the instant noodle and enoki into the pot and cook for 3 minutes after the water reach boiling temperature. Turn off the fire and add in the kimchi powder and stir.


Step 3: Time to serve

Pour the cooked instant noodle into a bowl. Put in the frankfurter, and sunny side up egg on top. Add a few drops of sesame oil to add fragrant. Then put in the Korean roasted seaweed and voila.

The Korean kimchi flavoured instant noodle ready to be serve. Slurp, slurp.

That's the way I cook my instant noodle, without the need of heating up the oil.
